These orange legs be one of Mother Nature’s most colorful works of genius!  Carrots usher the taste of a sweet rhapsody & art piled high with Vitamin A, fiber & beta-carotene that wilt sharpen thy eyesite.

Horse Drawn Carrot Salad  travels well on short journeys.  Try packing this goody for thy next picnic in the valley via a sealed container or plastic bag.  But keep a lookout for those faire hares hiding in the brush.  Word hath it that they possess a passionate pallet for these tasty orange sticks.

Ye Old Medieval Ingredients for Horse Drawn Carrot Salad, a Medieval Recipe

1 Pound Carrots – Peeled, Washed & Shredded
1 Apple – With Skin Redder Than A Baboon’s Parts
Juice of One Lemon
½ Cup of Golden Raisins OR Dark Raisins
2 Tablespoons of Walnuts, Chopped
½ Cup of Lite Miracle Whip OR Lite Mayo
2-3 Packets of No Calorie Sweetener

Chop apple into bite-sized chunks & marinate with the juice of the lemon.  The acid contained within the lemon wilt repel beastly brown splotches on thy apple, keeping it attractive & faire to the eye of the beholder.  (Village word hath documented that more than one lover hath been tempted with yon apple.)

Add carrots, golden raisins & chopped walnuts.  Plant the Mayo on top of the mixture, then sprinkle on the sweetener.  Mix to incorporate ingredients, but take heed to do it gently.
