 The Medieval Diet - Ye Village Bakery

King Arthur’s Lemon Meringue Cookies, Medieval Cookery

Makes about 24 cookies at about 20 calories each

These cookies be so light, so faire, so lemony that it should’st almost be a crime to feast upon them.  But ‘tis not!

Again, we hath a recipe whose main ingredient be egg whites.  Remember, the white of the egg contains zero cholesterol, so thou can feast upon this goody in abundance.

As for the cookies, enjoy several of these light luscious lovelies with a cup of warm rum-flavored tea that hath been sweetened with no calorie sweetener.

Ye Old Ingredients

3 Egg Whites
Dash of Salt
½ Cup of REAL Sugar
10 Packets of No Calorie Sweetener
1 Teaspoon of Grated Lemon Zest
1 Teaspoon of Lemon or REAL Vanilla Extract

Prepare a cookie sheet by lining with parchment.  Preheat thy oven to 400 degrees.

Beat whites of eggs in a cold stainless steel bowl, if possible, on high with thy electric hand mixer.  Beat till peaks form, then begin to slowly incorporate the sugars.

Continue to beat the whey out of the whites till thy hath formed stiff peaks.  Beat in extract then shut off mixer.

Take heed, folding in thy lemon zest with the utmost care.

Immediately drop by teaspoon onto parchment paper.  Place mounds approximately 1 ½ inches apart for growing room.

Place filled cookie sheet into hot oven, then twist off heat.  Cookies wilt be ready to remove in about two hours.  Store in an air-tight container.

If thy prefer, King Arthur cookies can be prepared just before bedtime & be allowed to rest in the oven all night.  If thy fear thieves may’st steal away thy goodies, then bake by the light of day.
