 The Medieval Diet - Ye Village Bakery

The Witch’s Claws, Medieval Cookery

Recipe ‘tis about 2,300 calories

Everyone in the village faire loveth pretzels!  Tasty variations of The Witch’s Claws can be made by adding a few dashes of cinnamon to dough, or sesame seeds to the baked crust, or even raisins to the dough.

Ye Old Ingredients

4 ½ - 5 Cups of Bread Flour
1 Package of Active Yeast
1 Hen Egg, Well Beaten
1 Cup of Skimmed Lukewarm Milk
½ Cup of Warm Water
3 Tablespoons of Sugar
1 ½ Teaspoons of Table Salt + Coarse Salt
1 Tablespoon Baking Soda
No Calorie Refrigerated Butter Spray

Pour yeast into large mixing bowl.  Add warm water to dissolve yeast.  Allow to stand 12 minutes. Next, stir in skimmed milk, egg, table salt, soda, sugar & two cups of bread flour.  Mix well.

Slowly add remaining bread flour then turn onto lightly floured board.  Knead ten minutes.  Thy whilst receive a workout for thy merry efforts!  Reap sweet rewards!

Next, place in a bowl that hath been smeared with no calorie refrigerated butter spray.  NO – not thy tired arms, rather thy bread ball.  Spray top & sides of dough with more butter spray.  Cover with lint-free cup towel or thy wilt be plucking fibers from thy teeth for a fortnite or more.

Allow to rise for one hour & ten minutes.  Transfer very carefully to thy floured board & roll into one long plump log about two feet in length.  Use thy husband’s foot for measuring, if need be.

Cut thee dough lengthwise into several strips that art about 1 inch in width.  Form loop & twist, then allow to rise on board for half an hour.

Bake in a preheated 350 degree oven till golden brown.  Roll immediately in coarse salt.
