Royal Cheesecake, a Medieval Recipe

Serves 8 generously for about 125 calories

Thou may’st add a bit more or less of either of the medieval recipe crust ingredients to get a workable crust as temperature, humidity & altitude affect end-result differently.  

Thou can also opt to use a ready-made crust of thy choice but be sure & count the calorie content as part of thy recipe. If thou use a ready-made crust, subtract 65 calories to delete the given crust, then add the calories of thy ready-made crust & divide by eight (8 servings). 

Ye Old Ingredients for this Medieval Recipe

CRUST
1 ½ Cups of Finely Crushed Lowfat Vanilla Wafer Crumbs
¼ Cup of No Calorie Refrigerated Butter Spray

FILLING
Two (8 oz) Packages of Fat-Free Cream Cheese, Softened
24 Packets of No Calorie Sweetener (Equals 1 Cup of Sugar)
1 Teaspoon of REAL Vanilla Extract
½ Carton of Egg Substitute or 2 Medium Hen Eggs
 

Mix crust ingredients.  Press into a springform pan OR just use an oven proof deep-dish pie plate. Next, mix filling, adding the eggs last till blended.  

Pour in thy crust & bake for about 40 minutes (till the center ‘tis almost set). Refrigerate at least 3 hours before feasting time. Top with fruit, fat-free topping, drizzled jelly or a bit of toasted coconut.

OPTIONAL

Experiment with additional lemon & lemon peel, strawberries, extracts such as almond, rum, brandy & mint.   Some of the creations thou may’st come to include:

 Almond Cheesecake topped with 2 Tablespoons of melted peach jam & sprinkled heavily with slivered almonds.

 Strawberry Cheesecake nestled inside a reduced fat chocolate vanilla wafer crust.
