 The Medieval Diet - Ye Village Bakery

Velveteen Biscuits - Low Calorie, Low Fat Medieval Recipe

Serves 1 dozen Villagers generously for about 90 calories each 

These biscuits art meant for sweet maiden’s faire, tho also enjoyed by barbarians – but they like theirs cut out with a heart-shaped cookie cutter.

Ye Old Ingredients
2 Cups of White Faire Flour
1 Tablespoon of REAL Sugar
1 Heaping Tablespoon Baking Powder
½ Teaspoon of Baking Soda
½ Teaspoon of Salt
2 Tablespoons Margarine
¾ Cup Skimmed Milk
1 Teaspoon White Distilled Vinegar
1 Teaspoon of Active Dry Yeast

Sprinkle yeast in ¼ cup of very warm water & add ½ teaspoon of sugar.  Allow to stand five minutes.  Mixture wilt be foamy like the village dog’s lips after he’s bitten into a wayward frog.

Combine flour, rest of sugar, salt, baking soda, baking powder & then cut in margarine till dough mirrors appearance of cornmeal.

In separate bowl, add vinegar to milk & stir to make buttermilk.  Add to foamy yeast mixture.  

Next, make a well in the midst of thy flour mixture & pour into it, the buttermilk & yeast mixture. Gently stir till combined.

Cover with plastic wrap & allow to rest in a warm spot in thy trusty kitchen.  The dough wilt not rise during this short time, so don’t get thy bones in a tizzy for naught.

Roll unrisen dough out on lightly floured board into large rectangle & cut with biscuit cutter.  Bake in preheated 425 degree oven till golden, about 12-15 minutes.

Enjoy piping hot with a shot of no calorie butter spray from thy refrigerator.  Biscuits can be sealed & reheated.
