It’s back – only this time with the added flavor of
potato!
The potato hath been a mainstay of the human diet
since the beginning of time. One of the strengths of this goody’s popularity
‘tis the ability to prepare in multiple ways. So many choices for the village
baker: hearty potato soup, baked potatoes, mashed potatoes, scalloped potatoes,
potato pancakes & our own Potato Peasant Bread.
- Ye Old Ingredients
- 2 Medium Sized Baked Potatoes, Skinned &
Mashed
- ½ Cup of Skimmed Milk
- 1 Small Hen Egg
- ½ Cup of Flour
- Salt & Pepper to Thy Personal Taste
- 1 Teaspoon of Baking Powder
- Non-Stick Cooking Spray
Combine potato with milk, egg, salt, pepper, baking
powder & flour. Spoon onto hot griddle sprayed with cooking spray. Allow to
crisp & brown before turning. Cook till done. Enjoy with a few squirts of
catsup, or if thy hath a sweet tooth, a dollop of jam.
