The Medieval Diet - Ye Village Bakery for Medieval Recipes Peasant Bread, a Medieval Recipe Approximately 1,300 calories per loaf This bread ‘tis both pure & simple, containing a mere four ingredients + water & cooking spray to deter sticking. Dump 1 cup of bread flour into large bowl, add water, salt & yeast. Blend well by hand or mixer. Add remaining flour 1 cup at a time till a rough ball of dough forms. Thy may’st not need all of flour, so use thy head when mixing.
Knead dough on a floured surface for 15 minutes by floured hands. Add flour to dough if dough becomes sticky. Place into a large deep bowl that hath been smeared with 1 Tablespoon of olive oil. Turn dough ball to coat with oil. Cover bowl with kitchen towel & place in warm spot in room. (Keep cat away from tasty goody.) Allow dough to double – about 2 hours of waiting. Play hopscotch with a villager whilst thy awaits. Punch down, shape & place on a baking sheet that hath been lined with parchment. Again, allow to double in size – about 1 hour of waiting. Place bread in pie plate sprayed with non-stick cooking spray. Bake at 400 degrees in preheated oven till golden brown – about 45 minutes of waiting. Additional Additives: Peasant Bread may’st also be brushed with an egg wash to bring about a shiny top to impress villagers that frequent thy quaint abode. Or, brush with egg wash & top with any of the following during the last five minutes of baking: oats, poppy seeds, sesame seeds or a lite feather dusting of cornmeal.
