The King's Table at The Medieval Diet - Tasty Medieval Recipes 

Peasant Chili - Low Fat, Low Calorie Medieval Diet Recipe

Serves 4 generously for about 250 calories each

Tasty, simple, fit for a King or a Peasant – but thy wilt want it for thy own self!  Hide chili in a dark, out-of-the-way hole to ward off thieves.

Ye Old Ingredients
½ Pound of Lean Ground Beef
1 Small White, Purple or Yellow Onion
Salt & Pepper to Thy Personal Taste
½ Can or 1 Cup of Pinto Beans (Hormel or Ranch Style Beans Work Well)
½ Can of Drained White or Yellow Hominy
2 Tablespoons Chili Powder
1 Tablespoon Cumin
1 Medium Sized Can Tomato Sauce
½ Cup Water

Brown ground beef in pot; add onion, chili powder, cumin, salt & pepper.  Add ½ cup water.  Heat, then add undrained beans, tomato sauce & heat again, till bubbling.  Add can of drained hominy, if desired.  Serve with crackers, a wedge of REAL cheese, peppers, & bottled chili sauce.
