The King's Table at The Medieval Diet - Tasty Medieval Recipes 

Ox Tail Soup - Low Fat, Low Calorie Medieval Recipe

Serves 4 generously for about 250 calories

Rich broth, simmering vegetables, brilliant colors.  Thou wilt find all of these fancies in Ox Tail Soup.  By the way, hath thou seen Bunyon’s ox, Blue perchance?

Ye Old Ingredients
½ Pound of Lean Stew Meat – Chunks OR 1 Small Package of Ox Tails
1 Tablespoon Oil
3-5 Beef Bullion Cubes
3 Small Green Onions, Chopped With Green Tops
Salt & Black Pepper to Thy Personal Taste
3 Carrots, Peeled & Cut Into Small Circles
3 Medium Potatoes, Peeled & Cut Into Large Chunks
 

Step 1 – Using Ox Tails - If thy use ox tails, sear in 1 Tablespoon of oil, then cook them in boiling water till done.  Allow the pot to cool completely then place into the refrigerator till fat rises to top of pot.  Remove fat & garner lean meat from ox tails, then go to Step 3.  This wilt guarantee the rich taste of ox tails without the fear of liquid fat in the pot.

Step 2 – Using Lean Stew Meat – Cook salt & peppered meat in oil till golden brown.  Go to Step 3.

Step 3 - Add 4-5 cups tepid water.  Bring to boil.  Add bullion, onion, carrots & potatoes.  Cook till potatoes art tender.

Enjoy Ox Tail Soup with hot biscuits, & fresh peaches bathed in lite cream with a dash of ginger, but be certain to account for additional calories.
