The King's Table at The Medieval Diet - Tasty Medieval Recipe

Mime’s Fryed Chicken, a Medieval Recipe

Serves 4 generously for about 250 calories each

This ‘tis the recipe that ran the Colonel out of the Medieval Village last winter.  Mime’s Fryed Chicken wilt please the most persnickety of pallets.

Ye Old Ingredients

4 Chicken Breast Fillets (About 3 Ounces Each) - Pounded To Smithereens Till Totally Flattened
1 Cup of Nonfat Plain Yogurt (Sugar-free Further Reduces Calories)
1 Teaspoon Dryed Thyme
¼ Teaspoon Paprika
1 Teaspoon Garlic Salt
1 Teaspoon Salt + ¼ Teaspoon Black Pepper
½ Cup Yellow Cornmeal
About 2 Tablespoons of Peanut Oil

Mix yogurt, thyme, paprika & garlic.  Add chicken & marinate in refrigerator for at least one hour.  Mix cornmeal, salt & pepper in a small bowl.  Coat marinated chicken with cornmeal mixture.  Discard leftover marinating sauce.

Heat oil in pan.  Thou may’st use any oil, but peanut fries chicken very faire & very well.  Cook without turning till chicken ‘tis golden brown.  Turn & cook other side till golden brown.  Turn once more & cook for 1 minute to ensure doneness.

Serve Mime’s Fryed Chicken with a small baked potato topped with no calorie butter spray, salt & pepper, & a small salad topped with fat-free honey mustard dressing – or thy favorite fat-free dressing.  Be certain to account for additional calories, if added.
