The King's Table at The Medieval Diet - Tasty Medieval Recipe

Lady Josephine’s Secret Meatballs, a Medieval Recipe

Serves 4 generously for about 275 calories each

Sweet nectar from Lady Josephine’s boiling pot!  This lady’s meatballs art so luscious, thou may’st hath need to fight off a legion of Lords who seek to feast upon thy table’s bounty.

Ye Old Ingredients
½ Pound of Lean Ground Beef OR Ground Turkey
10 Saltine Crackers
1 Hen Egg, Slightly Beaten
1 Teaspoon Salt
¼ Teaspoon Black Pepper
½ Can Whole Berry Cranberry Sauce
No Calorie Cooking Spray

Crush saltines & add to beef.  Add salt, pepper & egg.  Mix thoroughly.  Wet hands & form meatballs about size of a small plum.  Cook over medium heat in skillet sprayed with no calorie cooking spray till done.  

Drain when done, then add cranberry sauce.  Mix till fully melted.  Sauce wilt permeate meatballs & lend an exotic, merry full-bodied taste, both tangy & as sweet as Lady Josephine herself.

Delicious with 1 cup of winter squash & ½ cup of wild rice mingled with 1 teaspoon of golden raisins.   Remember to allow for these extra calories, if added to feast.
