The King's Table at The Medieval Diet - Tasty Medieval Recipe

Court Jester Ham, a Medieval Recipe

Serves 4 generously for about 200 calories (for Court Jester Ham only)

Ham can be a truly lean meat choice.  Check labels at thy village market for calorie & fat content.  If ham ‘tis of the high sodium variety, soak or rinse in a bit of water before using.  Pat dry.

Use sliced very lean ham when preparing Court Jester Ham.  Seek ham slices that contain no more than 50 calories per ounce, or per slice.

Ye Old Ingredients
½ Pound of Baked Lean Ham From Thy Market (8 Slices)
¼ Cup Brown Sugar, Packed
1 Small Can of Crushed Pineapple, Undrained
1 Tablespoon Pecans, Coarsely Ground

Roll ham slices into 8 cute ham logs.  Place logs into microwave-safe dish.  Sprinkle on brown sugar.  Cover with can of crushed pineapple & nuts.  Microwave till hot.

Enjoy with ½ a baked yam topped with no calorie refrigerated butter spray.  Add a slice of fresh bread & a bowl of sugar-free, fat-free vanilla pudding prepared with skimmed milk & topped with a Tablespoon or two of lowfat whipped topping.  

The topping can be enhanced by adding a banana, or some of the drained crushed pineapple to four servings.

Be sure to allow for any additional calories.
