The King's Table at The Medieval Diet - Tasty Medieval Recipe

Highlander Pie, a Medieval Recipe

Serves 4 generously for about 275 calories each

Filo dough ‘tis a light, low calorie, lowfat pastry goody that can be one of thy best friends whilst dieting.  Filo can be located in the freezer section of thy favorite village market.  The box wilt be flat & square.

Filo consists of very fragile, very thin layers & contains a mere 180 calories for every 3 sheets.  Use care when separating the layers for baking.

Ye Old Ingredients
¼ Pound of Lowfat, Lean Breakfast Sausage, Drained (2 ounces)
2 Medium Potatoes, Cleaned, Peeled & Diced
1 Cup of Sliced Mushrooms (Use small paint brush to swipe dirt free.)
8 Sheets of Filo Dough
4 slices of REAL Pepper Jack or Monterey Jack Cheese (70 calories per slice)
No Calorie Refrigerated Butter Spray
Salt & Pepper To Thy Personal Taste
Non-Stick Cooking Spray
Dryed Parsley Flakes (Optional)

Cook sausage until browned, then thoroughly drain off fat.  Toss in mushrooms & cook till done.  Cook potatoes in a non-stick skillet sprayed with no calorie non-stick cooking spray till almost done.   Or cook whole in microwave, then peel & dice.

Thy must work with a few sheets of the Filo at a time.  Mist with the no calorie butter spray to make them more pliable.  After spraying thawed Filo with butter spray, place two sheets together & fold in half.

Divide the sausage, potatoes, cheese & parsley into four teensy piles.  Place sausage on top of Filo. Spoon on tatters. Sprinkle with salt & pepper & parsley, if desired.  Next, top with cheese.  Roll dough to form a pie.  The shape should’st be similar to that of a modern village burrito.

Spray non stick skillet with non stick cooking spray.  ‘Fry’ until golden on each side, carefully adding more spray if needed. Or thy may’st use refrigerated no calorie butter spray for frying purposes.   Highlander Pie should’st be golden & crisp.  (Hot Tip from the Village Idiot: Highlander Pie continued on next page...)
