Medieval Food - Medieval Diet - Squire Tom's Vegetable Shack

Medallion Potato Cakes ©

Serves 2 generously for about 75 calories each

Ye Old Medieval Food Ingredients

1 Potato Shredded

1 Egg White

1 Teaspoon Milk

Salt & Pepper to Thy Personal Taste

No Calorie Cooking Spray

¼ Teaspoon Parsley

1 Tablespoon REAL Bacon Bits

2 Tablespoons REAL Cheese

 

Mix all of the above ingredients, except cooking spray.  Spray non-stick skillet & allow to warm. Drop potato cakes into skillet one Tablespoon at a time.  Allow to completely brown on one side before turning.  Use additional non-stick spray as needed.  Serve warm with Lady Jane’s Turnips & Greens.
